A quintessentially Italian red vermouth, made from a Nebbiolo base wine and an array of botanicals including wormwood, mint, cloves and rhubarb. The final blend rests for several months in wood barriques, developing complex flavours and aromas. The name is a nod to the American 19th century bartender Jerry Thomas – aka ‘The Professor’ – considered to be a pioneer in mixology.
