‘Le Paradis’ encompasses a 14-hectare site in Sancerre, characterized by Oxford limestone and a clay overlay. Here, Planchon holds a 0.9-hectare plot with a southern exposure, featuring vines averaging 55 years of age. Following manual harvesting, the grapes undergo a slow pressing in a pneumatic press and are pre-clarified at a temperature below 10°C for approximately 36 hours. Subsequently, spontaneous fermentation occurs, with 70% taking place in stainless steel tanks and 30% in 500-litre barrels. Ageing on the fine lees takes place in the same tanks, with the duration varying depending on the vintage. Bottling is then carried out in accordance with the lunar cycle.
