Quarts de Chaume is a tiny appellation that makes brilliant sweet wines made from Chenin Blanc. The 2012 from Domaine Baumard is viscous and creamy with delicious notes of quince, apple, mango and ginger. Despite its impressive richness it is wonderfully elegant and tempered by powerful, cleansing acidity. An immensely versatile wine, it pairs well with foie gras, blue cheese or classic desserts such as apple tarte tatin.
