DAOU’s 2017 Reserve Cabernet Sauvignon is made up of 75% Cabernet Sauvignon, 13% Petit Verdot, 9% Merlot and 3% Cabernet Franc and was aged for 20 months in 50% new French oak. The wine is still in its infancy, but opening beautifully in the glass, with aromas of dark berries, plums, crème de cassis, cedar and cinnamon stick. On the palate, it’s a full-bodied wine, concentrated and intense, displaying harmonious tannins and lingering floral, vanilla and tobacco notes.

Founders George and Daniel Daou began searching for the vineyards that would comprise the DAOU estate in the mid 2000s - their objective was to find the perfect terroir for producing world-class Cabernet Sauvignon. They eventually settled on an estate in the Adelaida District AVA in San Luis Obispo County, specifically a plot once singled out by oenologist André Tchelistcheff as being of great potential. 

It's rare to find high quality Cabernet Sauvginon in Paso Robles, rare even to find anyone vinifying the grape here, but the high altitude of the site combined with a forensic approach in the vineyard and winery have allowed the team at DAOU to produce some truly fantastic wines. The flagship Cabernet Sauvignons are dense, intense reds that are set to age for many decades. Mayote is a Cabernet Sauvignon / Syrah blend while the estate Chardonnay is a surprisingly elegant entry in the portfolio.
