Based in the commune of Courgis, Alice and Olivier de Moor have distinguished themselves as the radical side of Chablis, embracing minimal-intervention winemaking and biodynamic viticulture, alongside unorthodox bottlings and creative labels. Their wines are among the most sought-after natural wines in the Chablis region. Textured and saline, the pair`s Aligoté expresses crystalline citrus and fresh orchard fruits with a fine seam of chalky minerality.
