Son Mayol is a winery located on the island of Mallorca, part of the Balearic Islands in Spain. They produce a variety of wines, including this rosé made from Merlot. The grapes are typically harvested earlier than for red wine production to retain their freshness and acidity. The skins are left in contact with the juice for a short period to extract the desired colour and flavour components, resulting in a rosé wine with a pale pink hue and delicate fruity profile.
