Located in the Chavignol commune, François Cotat is celebrated for producing classic Sancerre wines. Their top vineyards include Monts Damnés, Les Culs de Beaujeu, Les Caillottes, and La Grande Côte, where this release comes from. Sauvignon Blanc grapes are handpicked with a slightly later harvest, enabling the flavour compounds to fully mature. In the winery, these grapes undergo barrel fermentation with wild yeasts and the wines are bottled without fining or filtration.
