Martin Codax was founded in 1986 and is considered one of the preeminent producers in the Rias Baixas DO in Galicia, northwest Spain. Organistrum is 100% Albariño partially fermented in 300-500-litre French oak barrels before additional maturation with lees in stainless steel tanks. Straw yellow in colour, this is a rich and textural wine with beautiful notes of stone fruits, citrus, dried white flowers, sea spray and a subtle smoky hint in the background. The classic pairing for seafood!
