Departing from conventional viticulture and winemaking approaches, this Chardonnay is cultivated in sandy soil, fermented in clay vessels, and shielded by a surface layer of olive oil. The wine underwent a 2-month maturation period in an amphora, maintaining continuous contact with the skins and stems. This process results in a texture that is largely uncharted in the realm of Chardonnay. As a natural, unfined wine, it might generate minimal tartrates and sediment in the bottle as it evolves over time.
