To encapsulate the essence of Cabernet Franc`s purity and vibrant red fruit, the grapes were harvested at a 10% potential alcohol. Through careful sorting, each grape underwent fermentation and skin maturation in a small amphora for four months. This results in an authentic and unadulterated expression of Cabernet Franc, with spontaneous fermentation by wild yeasts and no influence from oak. The natural, unfined, unfiltered nature of the wine may lead to the formation of small tartrates in the bottle over time.
