Inniskillin Riesling Icewine 2021 is an icewine produced from the Riesling grape variety in the Niagara region of Canada. Established in 1985 by Austrian chemist, Karl Kaiser, Inniskillin is synonymous with incredibly high quality icewine production. It is a remarkably difficult wine to produce, with temperatures having to reach -10C before harvesting begins and often picking is in the dead of night. The resulting wine is immensely complex, sweet and pure-fruited, with delicious notes of peach, pear, lime juice, honey and dried tropical fruits. "This is a glorious ice wine where acidity and sugar are in perfect harmony. The candied orange peel, ginger, straw and toasted walnut and straw are a mere preview of what’s to come. These intense flavours of apricot jam, pumpkin pie and lemon drops are matched by electric acidity." Wine Enthusiast, 2022
