Inniskillin Sparkling Icewine Half 2021

Inniskillin Sparkling Icewine 2021 is a sparkling icewine produced in the Niagara region of Canada. Established in 1985 by Austrian chemist, Karl Kaiser, Inniskillin is synonymous with incredibly high quality icewine production. It is a remarkably difficult wine to produce, with temperatures having to reach -10C before harvesting begins and often picking is in the dead of night. The resulting wine is immensely complex, sweet and pure-fruited, with delicious notes of peach, pear, lime juice, honey and dried tropical fruits. This sparkling version is rich and honeyed without being cloying, and would make an excellent pairing with blue cheeses or foie gras.
