This Dolcetto is a well-structured wine sourced from vineyards in Barbaresco`s Paje and Carso regions, situated on the Asili hill. The vines, aged 45 years and older, thrive in soils abundant with chalk, limestone, and clay. After fermentation in large casks with native yeasts, the wine undergoes an extended maceration period with a submerged cap, lasting nearly 100 days.
