Dominio del Aguila Canta la Perdiz 2018 is a full-bodied, single-vineyard Winemaker Jorge Monzón, whose CV includes time at Domaine de la Romanée-Conti and Vega Sicilia, has quickly established a reputation for producing some of the finest terroir wines in the Ribera del Duero appellation. His riserva tinto is a blend of Tempranillo, Garnacha, Bobal and the local white variety Albillo. Canta la Perdiz is a single-vineyard blend of Tempranillo, Cariñena, Bobal and Albillo. Each vintage is labelled to reflect the growing conditions of the year – the blue electric guitar for a cool vintage, the fiery piano for a warm one and a sweeping pink trumpet for one more moderate. "The 2018 Canta la Perdiz feels like a more rustic version of the 2016, with earthiness and abundant tannins and more backward than the approachable and juicy 2019 I tasted next to it. It fermented with full clusters and indigenous yeasts in concrete vats followed by a slow malolactic in barrel and 37 months in those barrels. The wine is still a little oaky, spicy and smoky, with good ripeness, 14.5% alcohol, good freshness and balance and abundant tannins that feel a little rustic. We`ll have to see how the wine develops in bottle. 1,365 bottles and 32 magnums were filled in November 2021." Luis Gutiérrez

In contrast with the high-alcohol, super-concentrated wines with which Ribera is typically associated, Aguila prizes elegance and restraint in its wines – all made made from carefully selected old-vine plots of Tempranillo, Blanca del País, Bobal, Garnacha, Albillo and Tempranillo Gris. All are farmed organically or biodynamically.

The domaine’s reserva, made from a plot of vines more than 100 years old and aged for 35 months in old French oak, is a masterpiece in concentration with restraint. Also look out for the clarete – an extraordinary barrel-aged rosé-coloured wine made with co-fermented white and red grapes. This traditional style of wine in northern Spain had been largely forgotten in Ribera del Duero until Jorge campaigned to have it recognised in the appellation.
