The Corvina, Rondinella and Molinara grapes used to produce Cesari`s excellent Amarone are dried for around four months before vinification. Once pressed, the juice is racked into large oak barrels for fermentation and ageing. The result is a traditional Amarone that marries sweet black and red fruit with delicate floral vanilla notes. Pair with red meats or strong blue cheeses.
