In the Marche region the Cardinale family produce a traditional wine made from the Visciole sour cherry and it is from this that their Ammalia Acquavite is distilled. The leftover must and ground cherry stones from the fermentation process are distilled using the bain-marie method (a slow process which commonly used in Grappa production) to produce a spirit of around 75% ABV. This is then cut back with spring water from Mount Nerone to give the final product which comes in at 40% ABV. A clear spirit with plenty of character, it exhibits notes of sour cherries and almonds.
