The Stars of Saint-Emilion

This blend is especially popular on the right bank of the Gironde in Bordeaux, France, where it is used to create some of the world's most sought-after wines including those produced by Château Cheval Blanc and Château Angelus. In California, the most famous proponent of this Saint-Emilion inspired assemblage is Dominus, a winery owned by the Moueix family, one of the most famous Bordelais winemaking dynasties.

In terms of flavour profiles, Cabernet Franc is known for its spicy, herbaceous notes and its ability to add structure and complexity to a wine. Merlot, on the other hand, is known for its soft, velvety texture and its fruit-forward flavours of plum, black cherry, and blackberry.
