Cantina Toblino collects grapes from nearly 600 growers and is a reference point for viticulture in the Valle dei Laghi. Nosiola, the indigenous white grape to Trentino, is the star of the show here and picking for the vin santo is in mid-October followed by 6 months of drying in lofts. During this period water is lost, sugars and flavours are concentrated and resulting yields are tiny. Sugar levels are so high fermentation can last for nearly 2 years! The resulting wine is complex with flavours of dried peach and apricot, honey, hazlenuts, orange marmalade and dried zesty fruits.
