Foradori, a pioneer in natural winemaking, is known for her commitment to traditional methods and minimal intervention in the vineyard.
Nosiola, an ancient local grape variety on the verge of extinction, has experienced a revival, thanks in large part to Foradori. They cultivate 2 hectares of Nosiola on clay-limestone soils in the Fontanasanta hills above Trento. The winemaking process involves destemming but not pressing the grapes. Whole berries undergo spontaneous fermentation and are aged in clay amphorae for 8 months. Subsequently, the wine matures in oak and acacia casks for an additional 2 months before bottling.
The 2023 Nosiola Fontanasanta is quite delicate in the glass, with a bouquet that requires coaxing but it worth the wait. Exotic floral tones, nuances of tropical melon and exotic spices fill the senses. The 2023 possesses a gentle inner sweetness and crisp mineral tones elevated by zesty acidity. Vivid notes of fresh apricot and peach contrast against a spike of green citrus. The Fontanasanta cleans up beautifully, pure and fresh, leaving a sensation of liquid stone and hints of lemon curd to fade slowly.
