Founded in 2003, Ulysse Collin is a boutique grower champagne producer based in Congy, to the south of Épernay. The family business is led by Olivier Collin, who did his apprenticeship with Anselme Selosse, the guru of the grower movement. ‘Le Jardin’ comes from a single 1.55-hectare plot planted with old vines of Chardonnay, Pinot Noir and Pinot Meunier. The wine was fermented and aged in oak barrels, bottled unfined and unfiltered. It`s a very vinous champagne, boasting notes of red apples, ripe pears and toast.
