The 2019 `Trouble with Dreams` combines 60% Chardonnay and 40% Pinot Noir sourced from Mount Harry, Coldharbour, and Storrington Priory vineyards, all situated in Sussex. Half of this blend underwent fermentation in aged Burgundy barrels, contributing to the development of richness and complexity. Following secondary fermentation, the wine matured on its lees for 3.5 years before disgorgement, and it was bottled with a dosage of 6 g/L. On the nose, expect citrus and stone fruit notes, complemented by floral, nutty, and pastry aromas. The palate is crisp and persistent, boasting fine bubbles and finishes with a flinty minerality.
