Shaw + Smith was established in 1989 by cousins Michael Hill Smith MW and Martin Shaw. They make wines exclusively from the Adelaide Hills, from varieties that suit the cooler climate. Aiming for elegance, restraint and the ability to age, the 2021 vintage offers up bright acidity and generosity of flavour. Expect white flowers, citrus, and nectarine notes. The 2020 vintage was very low yielding, which resulted in great concentration. The cool ripening conditions produced Chardonnay with intense flavours and excellent balance. Try with pan fried whiting.
