This is a lighter style of vin doux naturel from Rivesaltes. It is a blend of 90% Muscat à Petits Grains and 10% Muscat d’Alexandrie made via the process of ‘mutage’, whereby neutral grain spirit is added to halt fermentation at a desired sweetness level. It is light in colour, medium-bodied and wonderfully perfumed, exhibiting notes of apricot, lychee, honey and white flower blossom. Best when consumed young, it would be a delicious pairing with fruit pastries or blue cheeses.
