Château Pavie is one of the leading producers of Saint-Émilion and the 2001 is a beautiful wine from a vintage that is often overshadowed by the previous year but has continued to improve over time. A blend of 70% Merlot, 20% Cabernet Franc and 10% Cabernet Sauvignon, it is classically rich, ripe and powerful, with impressive savoury depth and effortless balance throughout.
The 2001 Pavie has a vibrant bouquet of lifted blackberry, raspberry and rose petal scents, joined by touches of cedar and mint from the Cabernets. The palate is well balanced with fine tension, structured but not overbearing. This is less dense than the 2000, with better-integrated wood and a lovely rondeur toward the finish. It seems to gain complexity in the glass, developing some lovely chestnut notes. You can broach bottles now, but they will keep for a number of years.

Chateau Pavie

Situated to the south-east of the town of St-Emilion, Pavis is the largest 1er Grand Cru Classé property in the commune with over 35 hectares of vines. The vineyards themselves are ideally situated on the south facing slopes of a limestone plateau for excellent exposure, ensuring optimal ripeness in the right conditions. Since the late 1990s, the Grand Vin has been a blend of 55% Merlot, 25% Cabernet France and 20% Cabernet Sauvignon, fermented in wooden vats and aged in 100% new oak for 18 months. The wines are bottled unfiltered for added concentration and texture.

Pavie was purchased in 1998 by Gérard Perse who has, assisted by consultant oenologist Michel Rolland, pushed the wines towards a bolder, more concentrated style with a focus on concentrated fruit on the palate and an expressive nose.
