Founded in 1907, Champagne Paul Clouet is run by the Bonnaire-Clouet family, based in the Grand Cru of Bouzy. `Selection` is composed of a blend of 50% Pinot Noir, 30% Chardonnay and 20% Pinot Meunier and sees a minimum of 30 months aging on the lees and a dosage of 7g/l.
