Pal`alma De Castilla Nuevo León is a Mezcal produced in very limited quantities in the state of Nuevo Léon, Mexico. Produced by distiller Jorge Torres using Agave americana and fermented with pulque. Pal’alma is the export brand of Almamezcalera, the bottling label of Erick Rodriguez, a well-respected Mezcal bottler known by some as the `Indiana Jones of agave`. Rodriguez works with artisan producers across the 20+ states of Mexico. Coveted by aficionados across the globe, his agave spirit bottlings were previously only available to customers who were able to meet Rodriguez in person, at his small appointment-only tasting room in Mexico City.
