Nc`Nean 5 Year Old Westie Sponge No. 1
For Westie Sponge One, two casks of Nc`Nean single malt were selected. Distilled in 2018, the whisky comes from two different yeast recipes: one featuring Anchor and Fermentis, and the other combining Anchor, Fermentis, and DistilaMax RM. After initial maturation in two first-fill hogsheads, the whiskies were combined and returned to the same casks for further maturation. Half of this batch—340 bottles—has been bottled as Westie Sponge One, at a slightly reduced strength of 55%. The remainder has been re-racked into refill casks and will be bottled in the future. This whisky, despite its youth, offers a surprisingly mature profile with a lusciously fruity character. It balances richness from the cask with a vibrant and detailed fruitiness from the distillate.
