Nanbu Bijin was first established in 1902 as a sake retailer only, until it was granted a licence in 1915 to brew its own products. This is one of their recent releases, a 2018 vintage Junmai sake made with Miyama Nishiki and Toyonishiki rices with a 65% polishing ratio. It boasts a deep amber colour, high acidity and plenty of umami notes.
