The 2018 Litmus White Pinot is crafted from Pinot Noir grapes that have been delicately handled to avoid extracting colour from the skins. The wine was aged in French oak barriques, ranging from two to five years old, for 12 months before being bottled in December 2020. It displays a pale straw colour and offers pronounced aromas of peach, rose petal, and honeysuckle. What sets this wine apart is its remarkable fullness, a characteristic not commonly found in English wines. It boasts a rich and velvety texture, harmoniously balanced by a sharp underlying acidity.
