This white Bordeaux was produced by Château Lestage, which earned the prestigious status of Cru Bourgeois Exceptionnel in the 2020 update of the Cru Bourgeois classification. La Mouette is the estate`s vineyard planted to 50% Sauvignon Blanc and 50% Sémillon. The vines are densely planted at a rate of 7,000 per hectare, occupying a small 0.5-hectare plot with clay and limestone soils. The grapes for La Mouette are meticulously hand-harvested, gently pressed, and the resulting juice is fermented and matured in oak barrels. This process involves a relatively brief ageing period on the lees, occasionally stirred [bâtonnage], before the wine is finally bottled.
