Emmanuel Lassaigne stands out as one of the most promising champagne producers, characterized by a vinous, racy and electric style, according to William Kelley in his Wine Advocate report. Lassaigne owns a mere 3.5 hectares of old Chardonnay vines situated in the overlooked village of Montgueux in the Aube. Lassaigne adopts a minimal intervention approach, refraining from fining or filtering, and employs minimal sulphur dioxide. This blanc de blancs is crafted from 0.6 hectares of 45-year-old vines, blending 76% from the 2015 vintage, 14% from oak-aged 2014, and 10% from bottled wines dating back to 2002.
