Inopia Blanc from Mounir and Rotem Saouma is a beautifully rich and aromatic blend of predominantly Grenache Blanc with lesser parts Bourboulenc, Marsanne and Roussanne. Raised in a combination of 500-litre casks and concrete eggs for 18 months in contact with its lees, it is textural and round but always remains impeccably fresh, with notes of stone fruits, citrus zest, crushed fennel seeds and herbs.
