Chapel Down Kit`s Coty Bacchus 2018
This is a wonderfully vibrant and subtly rich example of Bacchus from the Kit’s Coty Vineyard. All fruit was hand-harvested, whole-bunch pressed, fermented with indigenous yeasts in third and fourth use French oak barrels, and then underwent 9 months maturation on lees. From a warm vintage, this is ripe and generous yet crisply defined and refreshing, offering up notes of citrus, tropical fruits, nettles and chalky minerality. It is the perfect pairing for asparagus risotto.
