Farming organically and with drastically restricted yields, Cédric Bouchard produces a stunning range of single vineyard, single variety, single vintage, low pressure and zero dosage Champagnes. Les Ursules is 100% Pinot Noir from a 0.97-hectare plot of vines planted in 1974. This is a wine of supreme class and tantalising dynamism. It strikes exceptional balance between fruit, acidity and mineral tension, culminating in a wonderfully long, saline finish.
The 2016 Blanc de Noirs Les Ursules is a dense, powerful wine. Next to the Presle, it is deeper, richer and also more packed. Most of Bouchard's Champagnes need a few years in bottle to blossom. That is certainly the case here. The 2016 is impressive, but it needs time. As always, this tiny parcel measuring just 0.9 hectares yields a layered Blancs de Noirs with notable resonance and character. Zero dosage. Disgorged.
