Balcones Brimstone is a smoky corn-based craft whisky produced using Texas scrub oak at the Balcomes Distillery in Waco, Texas. Brimstone benefits from a unique process to obtain its smoky flavour. the whisky itself is smoked, rather than the casks in which the whisky is matured. The result is a bold yet refined whisky with campfire and caramel aromas backed by light corn, stone fruit and pepper. The Balcones distillery was established by the hugely respected distiller Chip Tate in an old welding shop in Waco, Texas, in 2008. Tate built the distillery’s first stills himself, even coopering some of its original casks. Tate has been succeeded by Jared Himstedt.
