New-Make Spirit
Also known as 'white dog' or 'moonshine', new-make spirit is unaged whiskey. While this style might seem unusual or innovative, it was actually a very common way to enjoy whiskey back in the olden days. Since there is no wood-ageing involved in the production of the whiskey, the flavours that dominate are those from the grains in the mashbill and the distillation techniques used to produce the spirit - think fresh grains and fruity esters. Bottling new-make is mostly the preserve of craft distillers in the US, but some more mainstream producers like Buffalo Trace also produce this historical style.
