One of Scotland`s youngest distilleries and currently the most northern on the mainland, Wolfburn focus on long fermentations and traditional slow distillations. The result is a bold, full style of spirit which blends notes of crunchy green apple and ripe pear with an upfront malty cereal note. The palate adds honeyed barley notes, baking spice along with a touch of peat (Northland was part aged in barrels previously filled with Islay whisky). The finish returns to the fresh fruit of the nose with a touch of wild heather honey to round things off. If Wolfburn have started how they mean to go on then Scotch lovers can rejoice!
