This Papaloye was made by Artemio Garcia Barrios in Tlacotenco, Guerrero, using the agave Cupreata. He employs traditional techniques cooking the agaves in earthen pits, milling them with a wooden mallet and ax and then double distilling in copper stills. This is a wonderful mezcal, incredible complex with notes of pine, leather, vanilla and ripe fruits.
