Tatenokawa 18

Founded in 1832 just outside Sakata City in the Yamagata Prefecture, Tatenokawa Shuzo is known for producing only Junmai Daiginjo, the most refined category of sakes. Made with rice that has been polished down to 18% - the highest polishing ratio in Japan – this expression offers pronounced notes of honeysuckle, pear, lychee and pineapple. A perfect accompaniment to carpaccio, sashimi, tofu and soft cheeses.
