Viña Tabalí was established in 2002 and is a pioneering winery situated in Limari, on the edge of the Atacama Desert in one of the northernmost regions of Chile. Payen is 93% Syrah with 7% Cabernet Franc produced from vines planted in 1997. It is whole berry fermented in small French barrels with 18 months maturation in French oak, 90% of which is new. It is brambly and spice-laden, with supple tannins and an intriguing, saline mineral streak. A delicious wine for curious drinkers that would make an off-the-beaten-track accompaniment to a classic Sunday roast of beef or lamb.
