Produced by Domaine Pierre Gonon, this red Saint-Joseph hails from 3 hectares of 80-year-old vines. The grapes undergo a partial destemming, ranging up to 20% depending on the vintage. Following a gentle crushing, fermentation occurs in large open vats before the wine is transferred to sizable oak barrels for ageing, a process lasting up to 16 months. With a deep ruby-red hue, it presents a complex nose featuring dark fruits such as blackberry and black cherry, accompanied by nuances of violets, black pepper, and spices. The palate showcases density and structure, revealing layers of liquorice spice and savoury black olive tapenade.
