Pensador is a relatively new brand of mezcal, first launched in 2017. It is the first release from the London-based spirits entrepreneur Ben Schroder and his company Meanwhile Drinks. Ensamble is made with two types of estate-grown agave, Espadín and Madrecuishe. Expect plenty of minerality on the nose and palate, plus notes of green apple, ripe banana, vanilla and toffee.
