Pauly Niederberg Helden Riesling Kabinett 2023 is a single-vineyard, off-dry Riesling from the Mosel Valley of Germany. Produced from 40+ year-old Riesling vines, this kabinett was fermented with ambient yeasts and matured in neutral foudre casks for around six months. The wine was produced from riper grapes than winemaker Axel Pauly`s standard dry Riesling, resulting in riper fruit and a fuller palate than his earlier-picked style. The fermentation was stopped around 8.5%, creating a fresh, light, slightly sweet Riesling, showcasing the winemaker`s signature purity of Riesling fruit expression.
