Marjan Simcic has been instrumental in introducing Slovenia`s wines to a discerning audience of fine-wine enthusiasts. He has beautifully showcased the potential of both the Goriška Brda region and the Ribolla grape. According to him, the Ribolla grape`s neutrality allows it to capture the essence of its terroir. In this instance, the vineyard`s unique "opoka" soil, a mineral-rich slate soil, results in impressively low yields of merely three to four bunches per vine. To craft this ubique wine, the fruit undergoes meticulous selection, followed by a partial maceration at low temperatures. Subsequently, it matures for nearly two years in conical 500-liter oak vats, and finally, it ages for an additional 18 months in the bottle. The outcome is a wine that exhibits a striking mid-gold hue and boasts concentrated notes of bruised apple and almonds.
