Domaine Chevillon-Chezeaux – formerly known as Domaine Michel Chevillon – consists of 8 hectares of vineyard across 14 different appellations. Working methods and winemaking have remained traditional throughout the domaine`s history. The grapes are harvested by hand and the juice goes through a slow, cold pre-fermentation for 5 or 6 days for better aromatic extraction. This cuvée is from Les Saint-Georges, one of the most prized premier cru vineyards in the Nuits-Saint-Georges appellation, producing rich and complex Pinot Noir wines.
