Abyss 2015 is a blend of 40% Pinot Noir, 40% Pinot Meunier and 20% Chardonnay, all vinified and aged in oak barrels. The grapes were specifically selected from vineyards with ancient marine limestone soils. The bottles are then matured for 2 years in their cellars, corked without additional sugar then aged off the coast of Brittany, on the seabed at a depth of 60 metres. The resulting wine is razor dry, filled with fresh-cut lemons and limes, wild honey and a saline, oxidative character.
