IWA Assemblage 4 is an ultra-premium Junmai Daiginjo sake. IWA is the brainchild of former Dom Perignon cellar master Richard Geoffroy. He showcases his blending (assemblage) skills in this sake, combining three rice varieties (Yamada Nishiki, Omachi, Gohyakumangoku) and five yeast strains. Assemblage 4 has a rounded mouth feel and a clean finish, with harmonious flavours of white pepper, toasted almond and artichoke.
