IWA Assemblage 3 is an experimental Sake produced by former Dom Pérignon chef de cave Richard Geoffroy in France. This third expression of IWA is a junmai daiginjo sake - the most refined style of sake usually reserved for special occasions. IWA Assemblage 3 is very refined with elegant botanical aromas and complex flavours punctuated by a subtle note of white pepper.
