An interesting project which involved recreating and restoring George Washington`s personal whisky distillery in Mount Vernon Virginia. This white rye was produced using historical accounts of contemporary mashbills and is not aged in oak before bottled, as was the fashion at the time. All the grain used in the production was ground using a water-powered mill, the beer was fermented in a wooden mash-tun and the spirit distilled on a traditional copper pot still - a fascinating chance to taste rye how it would have tasted over two hundred years ago.
