Domaine des Cavarodes is a sought-after natural wine producer based in the Jura. This particular release from Etienne Thibault is from an old, ungrafted vineyard outside the Arbois AOP, which is a field blend but mainly Chardonnay and Sauvignon. Aged for 10 months in old wooden barrels, the wine is marked by a pronounced minerality and savoury aftertaste.
